The secret behind forged WÜSTHOF blades

The quality of a forged knife can be seen in various features such as the blade, bolster or tang. As well as a perfect edge, the steel alloy and degree of hardness, expressed in Rockwell (abbreviated to HRC), have a significant influence on the sharpness and edge retention of the knife. The knife specialist WÜSTHOF explains how the steel, hardness and sharpness of a knife blade are linked.

Many different demands are made of a high-quality knife. It has to be sharp, fit nicely in the hand, ensure good balance and be hygienic and easy to look after. The blade should not only be sharp, it must also be corrosion-resistant, retain its edge for a long time and be easy to keep sharp.

The forged knives made by the traditional German company from Solingen are the result of the optimum use of ultra-modern technology and human know-how. The unique “Quality MADE IN GERMANY / Solingen” knives appreciated by home cooks and professional chefs worldwide are the result of more than 40 processes.
One of the formulae for the success of forged WÜSTHOF knives lies in the steel alloy: X 50 Cr MoV 15.

X Stainless steel.
50 0.5% carbon – the carbon content is important for the sharpness of the knives.
Cr Chromium ensures rust-resistance.
Mo Molybdenum – provides additional corrosion protection.
V Vanadium – protects the hardness and edge retention.
15 Chromium content as a percentage (15%).

Both the alloy of the blade steel and the subsequent hardening process have a critical influence on the quality of the knife blade. WÜSTHOF uses only high-quality chromium-molybdenum-vanadium steel for its knives, which is hardened to 58° Rockwell at 1,050° C and then cooled down before being heated again to 180° C (tempering). Numerous internal tests have shown that this production process results in the optimum characteristics for the steel, making it hard and yet flexible at the same time. At 58° Rockwell, WÜSTHOF knives are reliably durable and are easy to sharpen afterwards, even by inexperienced users.
Knives made of harder steel and with a higher carbon content can generally only be sharpened afterwards by professionals, who are able to achieve the right edge.

Following on from other production steps, the blades go through a subsequent sharpening process to give them their final, precise edge. This is made possible by the PEtec laser-controlled sharpening process developed by WÜSTHOF. Each blade is measured by laser before sharpening so that it can be given the optimum cutting angle. This guarantees a unique, consistently high quality.

More than 200 years of company history are reflected in the forged knives with the distinctive trident logo.
