The new range of knives from WÜSTHOF.
Balance meets Sustainability meets Precision.
The new EPICURE knives from WÜSTHOF are a kitchen tool to meet all challenges that need to be mastered in the kitchen. Combining the virtues of two great philosophies: the efficiency and lightness of Japanese knives combined with German quality and safety. This means EPICURE embodies a new type of knife – one that fulfils all cooking styles and sets standards in terms of function and performance.
The basics. In perfection.
In the process of the design development stage, what’s unnecessary is reduced and what’s required is optimised. “It is combining the main idea of something universal, the agility of the Japanese design with the features of German robustness and safety. That was our aspiration,” according to Bjoern Berger, Product Designer and Developer of EPICURE.
The handle, which is wide on the front and tapered on the back, features a profile adapted to the natural movement of the hand. This results in an ideal grip position. The newly developed curved bolster shape effectively protects the fingers from the sharp blade and provides more safety and control when cutting.
Optimised in every detail.
The wide designed blade shapes give more weight to the blade and clearly work more efficiently. This ensures not only safe, but also optimised working: The wide surface ensures greater control when guiding the knife, and the blade can be carried to the pot quickly and easily.
The evolution of balance.
Due to the innovative bolster geometry and the wider blade shape, the weight is concentrated in the middle of the knife. The blade moves neutrally around this centre of gravity. This results in an even balance, guaranteeing agile and effortless working.
Innovative by nature.
Tempting design and material: The knife wants to be taken in hand. A special feature of the EPICURE range is the handle material consisting of natural fibres and resin. Combining the comfortable feel of wood with the robustness and hygienic properties of plastic. So it completely lives up to the EPICURE tradition: It combines the best of different worlds and at the same time sets a sustainable sign for the environment with emission-free manufacturing.
Steel and hardness.
The backbone of the EPICURE knife is the forged unity of blade, bolster and tang made from a piece of high-alloy X50CrMoV15 blade steel. An optimal hardness of 58°HRC guarantees optimum sharpness and durable cutting edge, as well as flexibility and good resharpening ability.
Every EPICURE knife undergoes a PEtec sharpness process developed by WÜSTHOF to achieve the optimum sharpness. The blades are laser-controlled for sharpness piece by piece, factoring the minimum tolerances in the material’s shape and thickness into the finish. Every blade has the optimum sharpening angle of 15° and thus meets the WÜSTHOF standard.
