The steel

When you choose a WÜSTHOF knife, you can expect something really special.
It all begins with the material we carefully select for making our knives.

We use a special type of steel for making knives - chromium-molybdenum-vanadium steel.
This provides the basis for the most important feature of a knife - its sharpness!

WÜSTHOF- knives

  • Have an extremely high initial cutting performance thanks to PEtec.
  • Maintain their sharpness for a long time.
  • Are particularly resistant to corrosion.
  • Are easy to sharpen.

The formula for optimum sharpness: X50 Cr MoV 15

X High-quality steel Stainless steel: The basic material for our knives.
50 Carbon content At 0.5%; the carbon content is important for the hardness of the blades and therefore the sharpness of the knives.
Cr Chromium The additional alloy ensures particularly high stain-resistant qualities for the finished knives.
Mo Molybdenum An alloy element, which enhances the hardness and corrosion resistance of our knives.
V Vanadium Increases hardness and durability so that the blades do not wear down as much.
15 Chromium content At 15%
